Ingredients:

  • 9 lasagna noodles
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 10 oz fresh spinach
  • 15 oz ricotta cheese
  • 1 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions:

  • 1. Preheat the oven to 375°F.
  • 2. Cook the lasagna noodles according to package instructions. Drain and set aside.
  • 3. In a skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
  • 4. Add the mushrooms and cook until they release their juices. Add the spinach and cook until wilted.
  • 5. In a bowl, mix together the ricotta cheese, Parmesan cheese, oregano, basil, salt, and pepper.
  • 6. In a 9×13 inch baking dish, layer the lasagna noodles, ricotta mixture, spinach and mushroom mixture, and mozzarella cheese. Repeat the layers.
  • 7. Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  • 8. Let it cool slightly before serving.
