Creamy Spinach & Mushroom Lasagna

Ingredients:
- 9 lasagna noodles
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 8 oz mushrooms, sliced
- 10 oz fresh spinach
- 15 oz ricotta cheese
- 1 cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
Instructions:
- 1. Preheat the oven to 375°F.
- 2. Cook the lasagna noodles according to package instructions. Drain and set aside.
- 3. In a skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
- 4. Add the mushrooms and cook until they release their juices. Add the spinach and cook until wilted.
- 5. In a bowl, mix together the ricotta cheese, Parmesan cheese, oregano, basil, salt, and pepper.
- 6. In a 9×13 inch baking dish, layer the lasagna noodles, ricotta mixture, spinach and mushroom mixture, and mozzarella cheese. Repeat the layers.
- 7. Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- 8. Let it cool slightly before serving.
