Crockpot Cheesesteak Potato Casserole

Ingredients:
- 2 lb. beef sirloin, thinly sliced
- 1 onion, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 cup beef broth
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- Salt and pepper, to taste
- 4 cups frozen diced potatoes
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
Instructions:
- In a large skillet, cook the beef sirloin until browned. Add in the sliced onions and peppers, and cook until softened.
- Stir in the beef broth, garlic powder, onion powder, paprika, salt, and pepper. Cook for an additional 5 minutes.
- Spray the crockpot with non-stick cooking spray. Layer half of the diced potatoes on the bottom.
- Spoon half of the beef and vegetable mixture on top of the potatoes. Sprinkle with half of the cheddar and mozzarella cheeses. Repeat the layers with the remaining potatoes, beef mixture, and cheeses.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the potatoes are tender.
