Gorditas Infladas for dinner tonight


2 cups Maseca
2 tbsps flour
1 tbsp baking powder
1 tsp salt
2 cups warm water
Enough oil to fry (I use avocado)

Mix all your dry ingredients well. Add water and mix well kneading until you form a ball. Make 12 little balls. Take a tortilla press and lightly press each ball and set aside.
Add enough oil to a pot and heat on med-high. Add each Gordita to the oil overlapping the oil until it puffs up about 40 seconds per sideโ€ฆ remove from oil and place on paper towels and repeat until finished.
Cut the top open and fill with your favorite fillings. I did beans and queso fresco and garnished with cabbage, cilantro, tomatoes, red onion, queso and salsaโ€ฆ
