Ingredients:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 3 eggs
  • 1 cup marshmallow fluff
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar

Instructions:

  • Preheat oven to 325°F.
  • In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
  • Beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each addition. Pour over crust.
  • Bake for 50-60 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Carefully run a knife around the edge of the pan to loosen; cool 1 hour longer.
  • Beat marshmallow fluff until smooth. In another bowl, beat heavy cream and powdered sugar until stiff peaks form. Fold marshmallow fluff into whipped cream and spread over cooled cheesecake.
  • Refrigerate for at least 4 hours before serving.
