Potato cakes with leftover mashed potatoes.

 

INGREDIENTS:

Start with two cups of mashed potatoes.

Add a little over a 1/4 cup flour and 1 egg,

salt and pepper.

INSTRUCTIONS:

Heat a pan with canola oil and some butter and fry on medium heat on both sides. Drain on a paper towel and sprinkle salt right away.

Easy and quick!
